The largest state from North India, UP offers a variety of lip-smacking delights. Pedas of Mathura, Pethas of Agra, Jalebis of Benaras. This cuisine has a major influence of Awadhi and Nawabi cuisines. Various Nawabi cooking techniques such as Handi and Dum have blended quite well with vegetarian recipes and developed a whole new range of delicacies.
