Kerala Cuisine

The rich cuisine of Kerala is linked to the history, geography, demography and culture of the land. With coconuts growing in abundance, coconut cream and coconut milk are widely used in dishes for thickening and flavouring. Owing to the weather and the availability of spices, chilli, black pepper, cardamom, cloves, ginger, and cinnamon are frequently used. Popular vegetarian dishes include Kaalan, Thoran, Puttu, Kadala, Idli, Sambar, Dosa and Chutney, PullisseryAppam, Vegetable Stewetc. Kerala does not have any indigenous cold desserts, but hot/warm desserts are popular. The most popular example is Payasam. Other popular sweets include Unniappam, Kozhakkatta, Ilayappam and Churuttu. Jaggery or molasses is a common sweetening ingredient.
