Uttar Pradesh Cuisine

The largest state from North India, UP offers a variety of lip-smacking delights. Main courses such as Dal, Raita, Kofta have made it to menus of Indian restaurants, whereas chaat items such as Kachori, Samosa, Sev Puri, Bhel Puri, Pani Puri, and Chaat have become favourite leisure-time snacks all over the country. Luscious sweets such as Kulfi, Imarti, Kalakand, Raj Bhog, Petha, and Peda have managed to become an identity of the part they belong to and attract tourists from worldwide. E.g. Pedas of Mathura, Pethas of Agra, Jalebis of Benaras. This cuisine has a major influence of Awadhi and Nawabi cuisines. Various Nawabi cooking techniques such as Handi and Dum have blended quite well with vegetarian recipes and developed a whole new range of delicacies.
