How to make saffron extract
Saffron (kesar) is a precious and an expensive spice, which is why it is necessary to extract the most out of it, quite literally! Not only does this extract adds a mouth-watering flavour to a food item but also enhances its colour.

In a small, clean mortar, add a big pinch of saffron threads, approximately 1/4 tsp or 1 gram.

Grind the threads with the pestle until they are well crushed.

Heat 2 tbsp milk in a pan. Once the milk comes to a roaring boiling, turn off the heat.

Add the crushed saffron strands to the warm milk. Gently stir for saffron to release its colour, aroma and dissolve in the milk. Do not use a wooden spoon when mixing saffron as it can absorb saffron easily.

You can use this extract to flavour desserts, beverages and curry dishes.
