Ulli Vada is one of the simplest and easiest snacks that can be prepared. It is similar to the Rajasthani pyaj pakoda and is a well-loved tea-time snack across Kerala, both at homes as well as in restaurants.

Ingredients

  • Gram flour (besan) (2 cups)
  • Rice flour (½ cup)
  • Onion, thinly sliced (3 to 4)
  • Ginger (adrak), minced (1 tbsp)
  • Green chillies (hari mirch) (2 to 3)
  • Asafoetida (hing) (a pinch)
  • Curry leaves (kadipatta) (1 to 2)
  • Salt ( to taste)
  • Oil (for deep-frying)

Method

  • Combine all the ingredients (except oil) in a large bowl and mix properly. Add in some water and keep mixing the batter till it comes to an almost-thick consistency.
  • In a kadhai, heat oil for deep-frying.
  • Carefully scoop out small round portions of the batter and deep-fry them.
  • Let each fritter turn golden brown on both sides.
  • Serve the crispy Ulli Vada as a snack along with a cup of hot tea or coffee.
