Trivia Tadka

Ellu Sadam, also known as Sesame Rice or Til ke Chawal, has a distinct nutty flavour to it and is a favourite lunch-box recipe of Tamil Nadu. It is also served as ‘naivedyam’ (prasad) to Lord Vishnu.

Ingredients

  • White sesame seeds (safed til) (½ cup)
  • Rice (1 cup)
  • Dry red chillies (sabut lal mirch) (6)
  • Black gram (urad dal) (2 tsp )
  • Black mustard seeds (sarson) (½ tsp)
  • Asafoetida (hing) (A pinch)
  • Curry leaves (kadipatta) (6 to 7)
  • Peanuts (8 to 10)
  • Salt (To taste )
  • Sesame oil (til ka tel) (1 tbsp)

Method

  • Thoroughly wash and cook the rice. Once done, put it through a sieve to de-starch it. Spread out the rice in a paraat (big, flat plate with shallow edges) and allow it to cool.
  • In a kadhai, heat the oil and add in 1½ tsp of urad dal and dry red chillies. Sauté till it has turned golden brown. Transfer the mixture onto a plate.
  • In a pan, toss in the sesame seeds and keep roasting on a low flame till they have turned aromatic or have stopped popping. Remove from heat and allow to cool.
  • Grind 1 tsp of urad dal and chillies first. Then, add in the sesame seeds, salt and grind again. Keep the powder slightly coarse.
  • In a kadhai, heat oil. Add in the hing and sarson and allow it to splutter. Next, add the urad dal, peanuts, kadipatta and keep sautéing till the peanuts have turned light brown.
  • Turn off the flame and add the cooked rice to the prepared sesame powder and mix well.
  • Ellu Sadam is ready to be served.
